I was honored with an invitation to partake in a culinary fête that celebrates the timeless legacy of Kashmir. Hosted at the exclusive festival, PHIRA SAAL, held at the Citrus, nestled within the opulent @theleelapalacebengaluru, the event promises an immersion into the kitchens of the revered Kashmiri Pandits. Under the expert guidance of @chefrahulwali & Chef Sunil Mattoo, the festival spans across a decadent five-day sojourn, highlighting the crème de la crème of traditional recipes hailing from the paradise on earth. It is an occasion to relish and cherish the rich culinary heritage of the region, a feast for the senses and a tribute to the illustrious culinary legacy of the Kashmiri Pandits. In the Kashmiri Pandit style of cooking, Turmeric, yoghurt, and spices are king, With fennel, ginger powder, and more, Aromatic dishes to life they bring. Without onions and garlic, they work wonders, Crafting flavors unique and distinct, The cuisine is rich, elaborate, and soulful, Every dish has its story to depict. The aroma of Nadur Kebab fills the air, Kabargai with Doon Chetan Walnut Chutney to share, Mulchetan with fennel and ginger so bold, Each dish is a story to be told. Rogan Josh mutton with saffron rice, Chicken Yakhni and its comforting spice, Mujj Gaad with white radish and turmeric hue, Chaman Qaliya with paneer so true. Dumaloo and Rajma with yoghurt so pure, A cuisine that's both traditional and mature, And for dessert, Kong Phirin with fennel so fine, A royal touch to end the meal divine.
