
Bajra is well known as ‘Winter Millet’ because of it’s property of keeping us warm during cold weather & traditionally Bajra is paired with Ghee & Gud. Which ease the digestion of high fibre millet. So let’s give traditional trio a makeover & try this Bajra Cookies.. Detailed recipe for Bajra Cookies - Ingredients - 1. Ghee - 1/2 cup 2. Bajra flour - 1 cup 3. Jaggery syrup - 1/3 cup 4. Desiccated coconut - 1/3 cup 5. Ealichi powder (cardamom powder) - 1 tsp 6. Baking soda - 1/2 tsp 7. Salt - a pinch of Method to make jaggery syrup - 1. In a heavy bottom pan take jaggery around 250-300gms & add water approximately 1/2 cup. 2. On low flame let the jaggery melt & boil the syrup for 6-8 mins. 3. No need to boil for too long or else the syrup will get hard once its cooled down. 4. To get the syrup in a pouring consistency, boil only for 6-8 mins. 5. When the syrup is still hot sieve it to remove the dirt from jaggery & store it in refrigerator for later baking or cooking purpose. Method for Bajra cookies - 1. In a bowl take ghee, jaggery syrup & a pinch of salt. 2. Mix them well & now add the dry ingredients - bajra flour, desiccated coconut, elaichi powder & baking soda. 3. Mix everything & knead it like a dough. 4. Cover it & keep it in refrigerator for 15-20 mins. This will make the dough little hard. 5. Now make small balls of it & place it on the greased baking sheet. 6. Put some chopped almond or white sesame seeds on top & bake it for 20 mins on 170degrees. **** to bake it in kadai - pre heat the kadai & bake cookies on lowest flame for 30 -35 minutes *** 7. Once the cookies are cooled down, Store it in airtight jar.
