
Makar Sankranti is a festival that holds more scientific value than religious significance. It marks the time when the sun starts shining brighter in the Northern Hemisphere after the cold winter months. It is also the season when mid-winter crops like jowar, sugarcane, and sesame are harvested. Bihar’s Gaya managed to blend two such harvests into a delicious dessert, giving birth to Tilkut—a sweet made of roasted sesame seeds (til) bound together with sugar syrup. Every Makar Sankranti, the dessert can be prepared only under perfect environmental conditions. After this period, it cannot be made throughout the year. The makers say that during this season, the chasni (sugar syrup) attains the perfect consistency, allowing the sesame seeds to blend well and be shaped into round biscuits. For over 50 years, Tilkut has been an essential part of Bihar’s Makar Sankranti celebrations, originating from the Gaya district.
