Bathua Raita is a traditional and nutritious Indian side dish made using bathua (Chenopodium album), also known as pigweed or lamb's quarters, mixed with yogurt and a blend of spices. This seasonal dish is particularly popular in North India during the winter months when bathua is abundantly available. Known for its earthy flavor and health benefits, It pairs perfectly with parathas, rice dishes, or even as a refreshing accompaniment to spicy curries, adding a cooling and flavorful element to the meal. 1 cup bathua leaves (washed and finely chopped) 2 cups plain yogurt (curd) 1 tsp roasted cumin powder ½ tsp regular salt (or as per taste) ¼ tsp red chili powder (optional) 1-2 tbsp finely chopped coriander leaves (for garnish) For tadka  Oil Jeera Dry red chillies  Instructions: Prepare Bathua Leaves Wash the bathua leaves thoroughly to remove any dirt. Boil them in water for about 5-7 minutes or until soft. Drain the water and let them cool. Blend or mash the boiled bathua to form a smooth paste. Whisk the Yogurt In a bowl, whisk the yogurt until it becomes smooth and lump-free. Mix Ingredients Add the bathua paste to the yogurt and mix well. Add roasted cumin powder, black salt, regular salt, and red chili powder (if using). Mix thoroughly. Adjust Consistency If the raita is too thick, add a little water to adjust the consistency as per your preference. Serve and Garnish Transfer the raita to a serving bowl and garnish with chopped coriander leaves.
