Perfect for ℍ𝕖𝕒𝕝𝕥𝕙𝕪 𝕣𝕖𝕝𝕒𝕥𝕚𝕠𝕟𝕤𝕙𝕚𝕡𝕤 ℝ𝕖𝕔𝕚𝕡𝕖 𝕗𝕠𝕣 𝕂𝕒𝕣𝕖𝕝𝕒 ℙ𝕒𝕣𝕒𝕟𝕥𝕙𝕒/ 𝔹𝕚𝕥𝕥𝕖𝕣 𝔾𝕠𝕦𝕣𝕕 ℙ𝕒𝕣𝕒𝕟𝕥𝕙𝕒 Ingredients: • Peels of 2 medium-sized bitter gourds (karela) • 1 medium-sized potato, boiled and mashed • 1 cup whole wheat flour • 1 small onion, finely chopped • 2 green chilies, finely chopped • 1 tsp cumin seeds • ½ tsp turmeric powder • ½ tsp red chili powder • Salt to taste • 1 cup fresh coriander leaves, chopped • 1 tbsp oil (for the dough) • Ghee or oil (for frying the paranthas) Instructions: 1. Prepare the Peels: • Wash and scrape the peels of the karela (bitter gourd). • Finely chop the karela peels and set them aside. Soak them in salt water for 10 minutes and then squeeze the excess water 2. Mix the Dough: • In a large bowl, add the whole wheat flour, chopped onion, green chilies, carom seeds, turmeric powder, red chili powder, salt, coriander leaves, and chopped karela peels. • Add the boiled and mashed potato to the mixture and combine well. • Drizzle 1 tbsp oil over the mixture and knead it into a soft dough by adding water little by little. 3. Roll the Paranthas: • Divide the dough into small equal portions. • Roll each portion into a ball and flatten it slightly. • Roll out each ball into a circular parantha, dusting with flour if needed. 4. Cook the Paranthas: • Heat a tawa or skillet on medium flame. • Place the rolled parantha on the tawa, and cook until small bubbles appear on the surface. • Flip the parantha, apply ghee or oil, and cook until both sides are golden brown and crispy.
