Made with love, straight from my kitchen to Lord Ganesha’s blessings. 💫✨ Beetroot Coconut Modak Recipe for Ganapati Festival Ingredients: • 2 cups grated beetroot • 2 tbsp ghee • 1/3 cup roasted coconut • 1 tsp cardamom powder • 1 cup powdered mixed nuts and seeds (almonds, cashews, pistachios, pumpkin seeds, melon seeds) • 6-8 dates (pitted and chopped) Method: 1. Dry Roast the Coconut: Begin by dry roasting the grated coconut in a pan on low heat until golden brown. Once roasted, set it aside. 2. Cook the Beetroot: In the same pan, heat 2 tbsp of ghee and add the grated beetroot. Cook on medium heat for 10-12 minutes until the beetroot becomes soft and its moisture is mostly evaporated. 3. Add the Dates: Stir in the chopped dates and cook for another 2-3 minutes until they blend with the beetroot mixture. Remove this mixture from the heat and transfer it to a plate. 4. Combine the Ingredients: While the mixture is still warm, add the roasted coconut, cardamom powder, and the powdered mix of almonds, cashews, pistachios, pumpkin seeds, and melon seeds. Mix everything well until it forms a thick dough-like consistency. 5. Shape the Modaks: Grease your hands with a little ghee and shape the mixture into small modaks using your hands or a modak mold. 6. Serve and Enjoy: Offer these healthy and vibrant beetroot coconut modaks to Lord Ganesha, and enjoy the delicious treat with family and friends.
