
▪︎The Agastya flowers are also little bitter and astringent, but the white are less than the red. ▪︎It’s possible to reduce the bitterness by removing the stamen. The flower’s texture is mildly crunchy and fibrous, but after cooking it will soften. ▪︎It’s also best to choose the flowers that has not yet bloomed, as these will be softer & less leathery. ▪︎ Clean the flowers with intact pedicel (green part) and small insects if any. ▪︎During Kartik Month these flowers are added to the Habisa dalma and even rice flour based fritters can also be made known as "Agasti Fhula Pithau". PROCESS: ●Need to make a batter by using soaked small cup of rice(for 1hr)or rice flour, after that add little whole cumin, 2-3 black pepper or crushed green chilli and ginger. This kind of rice based batter for making fritters is called as PITHAU in Odia. Now add salt to the batter.(use of turmeric can be avoided since it's restricted during Habisa) ●Now heat a iron flat pan and dip your petals of flower holding the pedicel in the batter. Then pan fry it on both the sides till it turns golden brown by using any neutral oil or mustard oil.
