This delicious dish comes from the Western part of Odisha. These delicate flower buds start turning black soon after it's harvest, sourcing them fresh is a difficult job. Due to its short self life & short-term availability makes it very exclusive. They are rare to find at the same time very costly in season. Mostly found in the tribal forest areas. Apart from Western Odisha it is also consumed in a few other parts of Odisha which I can guess from the comment section on my previous reel. There might be different versions & recipes existing. I tried a simple version of this delicious ingredient from my limited experience and knowledge. We are blessed with so bio-diversity and culture to explore. This dish includes lots of tomatoes to reduce the astringency and break down its gummy texture. Along with the taste they are nutritionally very good for health with lots of minerals & nutrients. Trying my best to bring out these lesser known ingredients of India.
