You’ll find vitamin K, vitamin C, potassium, magnesium, vitamin B1, and fiber in these slender green beauties. They are also rich in antioxidants. And it’s all made easily in a blender. 𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀- • 1 cup roasted peanuts • 1 cup cucumber, chopped • 2 small green chillies • 1/2 cup mint and coriander leaves • 1/2 cup grapes • 2 tablespoons fresh lime juice • 1/4 inch ginger • 1/2 tablespoon ground cumin • 5 ice cubes 𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻- 1. Add peanuts, chillies, mint and coriander, grapes, fresh lime juice, ginger and ground cumin in blender. 2. Blend a bit and add ice cubes to smoothen the paste. Cold water can be used as an alternate. 3. Blend it nicely, take our in a cup or jar. 4. Garnish with chopped cucumber and coriander and Voilà. Vegan Cold Cucumber Soup is ready. Serve Cold.
