
𝗦𝗮𝗹𝗮𝗱-𝗲-𝗤𝘂𝗮𝗿𝗮𝗻𝘁𝗶𝗻𝗲 𝗯𝘆 @yashika_patel Episode-5 𝗜𝗻 𝗙𝗿𝗮𝗺𝗲 - Mexican Hotpot (Brown Rice) 𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀- Mexican Salad • 1 green bell pepper, chopped • 1 cup corn kernels • 1 red onion, chopped • 1/2 cup olive oil • 1/2 tspn vinegar • 2 tablespoons fresh lime juice • 1 clove crushed garlic • 1/4 cup chopped fresh coriander and Mint leaves • 1/2 tablespoon ground cumin • 1/2 tablespoon ground black pepper • 1/2 teaspoon chili powder • 1 cup kidney beans, drained Mexican Bean Rice • 1 cup kidney beans, drained • 1 tablespoon butter • 1 onion, diced • 1 red bell pepper, diced • 2 cloves garlic, minced • 1 cup corn kernels • 1 cup kidney beans, drained and rinsed • 1 cup diced tomatoes, with juices • 2 teaspoons chili powder • 1 teaspoon cumin • 1 cup long-grain Brown Rice • salt and freshly ground black pepper • 1 cup shredded cheese • Chopped cilantro, for garnish 𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻- Mexican Salad 1. In a large bowl, combine beans, bell peppers, frozen corn, and red onion. 2. In a small bowl, whisk together olive oil, red wine vinegar, lime juice, lemon juice, sugar, salt, garlic, cilantro, cumin, and black pepper. Season to taste with hot sauce and chili powder. 3. Pour olive oil dressing over vegetables; mix well. Chill thoroughly, and serve cold Mexican Bean Rice 1. In a Pan, heat some butter over medium high heat. Add the onion and bell pepper and cook, stirring frequently, until the vegetables are tender and the onion is translucent, about 5 minutes. Add the garlic, corn and kidney beans and cook until the corn and beans are heated through, about 2 minutes. 2. Stir in 1 1/2 cups water, the diced tomatoes and their juices, chili powder, cumin, rice and a pinch of salt and pepper. Bring to a boil, cover, reduce the heat and simmer until the rice is cooked, about 20 minutes.
