It is not news to us that nature and its wondrous wonders are so vast that much remains unexplored. However, thanks to people like Dr Livingstone C Soans of Soans Farms, the students of the second course MAIC were able to broaden their knowledge horizons and learn about more species, as well as explore the cultivation of diverse plants. On the main highway, 5 km from Moodbidri to Karkala, “Soans Farm’, is a home to over 170 species of flora. The Farm, which was founded in 1926 by Swiss and German missionaries as a pilot project to bring under cultivation hilly areas, has now grown into a large centre of innovative horticulture. During the excursion led by Chef Ajith and Chef Dayananda, students sampled and brainstormed the various culinary prospects of a diverse collection of plants, fruits, and flowers. Among the exotic flora explored were miracle fruit, rambutan, durian, langsat, macadamia nut, mangosteen, dragon fruit, abiu, and jaboticaba. Additionally, they had the chance to taste some homemade pineapple juice, jam, nutmeg jelly, jaboticaba wine and much more. Following this the students visited Thousand pillar Jain temple and had the opportunity to try katmandige. Katmandige is a renowned Jain delicacy made of rice flour mixture, made into thin layers using muslin cloth and topped with icing sugar and cardamom powder and is famously served on the occasion of flowering of a woman. Later, at Madhura Restaurant, the students of 2nd course MAIC students had an opportunity to eat some specially prepared of the best Gauthi country chicken with neer dosa, Bangude pulimunchi with red rice.
