Amla (Indian gooseberry) – 5 kg ingredients – each 50 g Bidrikand – 50 g Safed Chandan – 50 g Vasaka – 50 g Akarkara – 50 g Shatavari – 50 g Brahmi – 50 g Bilva – 50 g Choti Har (Haritaki) – 50 g Kamal Kesar – 50 g Jatamansi – 50 g Gokhru – 50 g Bel – 50 g Kachoor – 50 g Nagarmotha – 50 g Laung (cloves) – 50 g Pushkarmoola – 50 g Kakadsinghi – 50 g Dashamoola – 50 g Jiwanti – 50 g Punarnava – 50 g Ashwagandha – 50 g Giloya – 50 g Tulsi leaves (basil) – 50 g Meetha Neem – 5Punarnava – 50 g Mulethi (licoricekka (raisins) – 50 g Mulethi (licorice) – 50 g Ingrediants after the pulp Ghee 250 g Til (sesame seed) oil – 250 g Sugar – 3 kg (flavour/finishing) ingredients: Pippali – 100 g Bansh lochan – 150 g Dalchini (cinnamon) – 50 g Tejpatra (bay leaf) – 20 g Nagakesar – 20 g Choti Ilaichi (green cardamom) – 20 g Kesar (saffron) – 2 g Honey – 250 g Method Boil Amlas: 5 kg amlas, and boil them with all herbs (50 g each) in ~12 litres water for 1–1.5 hours till soft. Rest Overnight: Turn off heat and leave covered overnight. Make Pulp: Next day, remove seeds, wash amla and grind amlas into fine paste. Strain to remove fibres. Cook: Heat sesame oil and ghee in an iron wok, add amla pulp, then add sugar. Cook on low flame till thick. Add Spices: Mix in powdered spices (pippali, dalchini, cardamom, etc.). Cook till shiny and dark. Finish: Cool slightly, then add saffron and honey.
