Fried Lime Pickle/ എണ്ണയിൽ വറുത്ത ചെറുനാരങ്ങാ അച്ചാർ written recipe👇( Recipe courtesy @ennuswanthamamma) Lemon -4 Dried red chilly-24 ( for one lemon its six dried chilly so adjust accordingly) Fenugreek seeds -1/4 tsp Asafoetida powder or hing- Sesame oil Salt Wash the limes and wipe them well using a cotton cloth or a tissue.Using a skewer, poke a hole in each lime.Heat sesame oil in a flat bottomed pan.Fry the limes until they change colour and turn soft; make sure to fry on low flame.Allow the limes to cool down.Cut the fried limes into small pieces. In another pan fry the dried chillies till colour changes ( bit dark). Set aside. Fry fenugreek seeds and asafoetida in same pan. Once colour changes,Grind the red chillies, fenugreek seeds and asafoetida powder in a blender to fine powder. Heat sesame oil in another pan. Into it add the cut lime pieces. Saute for few minutes. Add the powder and salt. Mix well. Adjust salt and asafoetida as per taste.The colour would be a dark brown.. Allow this cool down completely
