Mati Handi Mutton - Odisha On My Plate-1 . Odia-Style Mati Handi Mutton (Clay Pot Mutton Curry) 🪔🍖 This traditional dish from Odisha is slow-cooked in a clay pot (“mati handi”), which gives the mutton a smoky earthy flavor. It’s similar to the style often made in rural homes. ⸻ Cooking in Mati Handi 1. Heat mustard oil in a clay pot (mati handi) until slightly smoky. 2. Add dried red chilies, bay leaf, cinnamon, cloves, and cardamom. Fry for a few seconds. 3. Add chopped onions and cook until golden brown. 4. Add tomatoes and cook until they soften and release oil. 5. Add coriander powder , turmeric powder, meat masala ,salt and cumin powder; mix well. 6. Add the marinated mutton and fry for 8–10 minutes on medium heat. 7. Add potato pieces and mix. 8. Pour enough warm water to cover the meat. 9. Cover the clay pot and cook on low flame for 35–45 minutes, stirring occasionally. 10. When the mutton becomes tender and gravy thickens, sprinkle garam masala. ⸻ Final Touch • Garnish with fresh coriander leaves. • Let it rest 5 minutes in the clay pot to absorb flavor. .
