Went for the 7 course Italian dinner with Fabelle at Ottimo, ITC Royal Bengal and here’s everything we had: - Marinated burrata with mesclun greens, sour cherry glaze and dark chocolate shavings. - Atlantic salmon carpaccio with goat cheese and white chocolate drizzle. Silky salmon, a little tang from the cheese, and the white chocolate was weirdly perfect. - Jerusalem artichoke soup with confit prawn and dark chocolate. Earthy, rich, and that hint of chocolate made it unique. - Chicken liver pâté with toasted hazelnut crumble and cocoa dust. Buttery, smooth pâté and just a dust of cocoa for balance. - Homemade fettuccine with roasted peppers, scallops, aged parmesan and dark chocolate crumble. Al dente pasta, smoky peppers, and that little bitter dark chocolate. - Slow braised duck leg with aged parmesan risotto and dark chocolate glaze. Duck was fall-apart tender, risotto was creamy, and the dark chocolate glaze tied it all together - Finished with the Fabelle Cocoa Trail. A whole journey of chocolate textures to end the meal. Seven courses, chocolate in every single one, and somehow it all worked.
