
I am obsessed with this homemade biryani recipe that I learned off a small youtube channel (#lucknowcookingdiaries) and modified it to my taste. It legit can be cooked in under an hour if you forget the rice soaking time (which can be sped up by using lukewarm water to soak the rice in). Here's the recipe in a nutshell for roughly 5-6 servings: Wash and soak 600 gm. Basmati rice for at least 1 hour (aim for 2). Take 20 green cardamom, 1 stick cinnamon, 10 peppercorn and 5 gm. mace. Make a fine powder. In a largeish kadhai heat 100 ml. Mustard oil till it smokes. Add 50 gm. thinly sliced onion and fry. When the onion is golden, add about 1 kilo chicken, (I used drumsticks and thighs cut in large chunks, about 4 drumsticks and 3 thighs cut in half). Fry over high heat for 3-4 minutes. Add 30 gm. ginger garlic paste, 5 gm. red chilli powder, 10 gm. salt and stir fry over high heat. Then cover and cook over simmering heat for 10 minutes. Turn off the heat, add the prepared cardamom-mace spice blend and 75 ml. milk. Stir it in lightly and reserve. Meanwhile, heat 2.5 litres water and add 3-4 green cardamom, 1 star anise, 5-6 cloves and 2 bay leaves in it. Add 30 gm. salt (or enough till the water tastes like seawater). Bring to a boil, add the rice and cook till the rice is 70% cooked, over medium heat, covered, about 7-10 minutes. Do not stir the rice. Mix together 2 gm. Turmeric with 25 ml. kewra water. Drain the liquid from rice. Layer the bottom of a 10-inch degchi with some of the oil floating on top of the chicken gravy. Add a layer of rice (1/3rd), then half of the chicken with a little of the gravy, then another layer of rice, followed by another layer of chicken with the rest of the gravy. Finish with a final layer of rice (remove bay leaves and large visible spices at this point). Sprinkle the kewra water on top. Now cover the top with a fitted lid, put something heavy on it, and then put on high flame for 4-5 minutes, then 15 minutes on simmer, then turn off the heat and leave it alone for 15 minutes more. The result is this incredibly simple and delicious chicken biryani. You can add potatoes, but I love it with homemade raita. #biryani
