I have a special place in my heart for lamb chops. The ones you see here are from @bombastic.kolkata . They were served on a bed of soft polenta, that created a rather simple base for the robust flavours of the chops that went into a spicy marinade, then sous vide-d and grilled to a medium rare. It came with grilled vegetables, crunchy and charred from the heat. I particularly enjoyed crunching down on the brussels sprout, generously squeezing some lemon juice on it first. The chop, by itself would be slightly too seasoned, which is why the need for the polenta. A solid, comforting dish that I'd come back to. #bombasticsupperclub #bombastickolkata #lambchops #food52
