In a blender, add spinach, coriander, chillies, and a little water — blend into a smooth paste. 2. In a pot, boil quinoa until soft and fluffy. 3. Heat ghee in a pan, add mustard seeds, cumin seeds, and curry leaves. 4. Add ginger-garlic paste and sauté till fragrant. 5. Add chopped onions and fry until golden brown. 6. Add tomatoes and cook till they soften. 7. Add the spinach-coriander paste, salt, and garam masala — let it boil for a few minutes. 8. Finally, add the cooked quinoa, mix well, and simmer for another 5 minutes. 9.
