Happy Valentines Day 💗💗💗 Here’s a quick Cheesecake recipe to celebrate Love !🍓 For the base 1 cup of almond flour 1 cup of coconut flour 1 cup of pitted dates 1/2 cup of vegan butter For the filling 2 cups of cashews soaked for 4 hours in hot water 1/4 cup of Coconut Oil 1/2 cup of Coconut Milk 3 tablespoons of coconut sugar Decoration Fresh strawberries Method 1. For the base mix all the dry ingredients in a food processor and the transfer to a bowl and it aside. 2. Lightly grease a 9” springform cake mould with some butter 3. Transfer the mixture into the tin and press it down with your finger until you have a set base. 4. Bake the base for 4 min at 180 deg C and the let it cool for an hour at least. 5. For filling blend all ingredients in a blender until they are smooth and creamy. 6. Transfer the mix on the base and even it out with a spatula. 7. Place the cake in the refrigerator and let it set for at least 12-14 hours till it’s completely solid. 8. Since we have not used gelatin it will take time to set. 9.
