🥔 Banarasi Khatte Aloo X @enginebrand.in Ingredients For Mustard Paste: 2–3 tbsp yellow mustard seeds (boiled 4–5 min in salted water) 1 tbsp coriander stems 1-inch ginger 3 green chilies 2–4 garlic cloves → Grind all into a smooth paste. For Potatoes: 8–9 large potatoes (halved) ¼ cup mustard oil ½ tbsp degi red chili powder Salt to taste → Marinate and shallow fry till half-cooked. For Gravy: 3–4 tbsp mustard oil Prepared mustard paste 2 chopped onions 2 chopped tomatoes 1 tsp turmeric 1 tbsp coriander powder ½ tbsp red chili powder Salt, 1 tsp sugar (optional) 1½ tbsp amchur powder 1 tbsp lemon juice 2 tbsp coriander leaves Water as needed Process: 1. Heat mustard oil, add mustard paste → sauté 2–3 min. 2. Add onions, salt, sugar → cook till golden. 3. Add dry spices, then tomatoes → cook till soft. 4. Add fried potatoes + water → cover and cook 7–8 min. 5. Finish with amchur, lemon juice, coriander, and a little mustard oil. For Fried Chilies (optional): Fry 4–5 dry Kashmiri chilies in mustard oil till crisp. Garnish: Fried chilies & coriander sprig.
