
Recipe: 1. Take 6 small potatoes (~343 g total), wash, peel, and slice thin like wafers. Wash again,pat them dry completely(it is important else wafers won’t be crisp). 2. Season with salt, black pepper, and 2 tbsp mustard oil (or olive oil). 3. Air-fry at 160°C for 15–16 min (flip halfway), then 180°C for 8–10 min until crisp(check halfway and flip if needed). Set aside. 4. Meanwhile airfrying potatoes, for the dressing: mix 1.5 tbsp olive oil + 1 tbsp pomegranate molasses + 1 tsp soy sauce + chili flakes + oregano. 5. Add 1 sliced onion, ½ red bell pepper (~250 g), spring onions (1–2 stalks). Toss well. Additionally you can add chopped walnuts for extra crunch and fresh parsley for freshmess, I didn’t have them so didn’t add those. 6. Add 90% of the crispy potato wafers into the mix. 7. Top with the remaining wafers for crunch and color.
