Add 4–5 cloves garlic (finely chopped) and sauté for 30–40 secs until fragrant. * Add 1 large onion (sliced) + ½ yellow capsicum (sliced) + ½ red capsicum (sliced) + ½ green capsicum (sliced) *Sauté on high for 3–4 mins — keep them slightly crunchy. * Season with ½ tsp salt, ½ tsp black pepper, 1 tsp chilli powder, ½ tsp cumin powder, ½ tsp garlic powder, ½ tsp chilli flakes, ½ tsp oregano, and ½ tsp paprika. Mix well. * Add ½ cup boiled rajma and toss everything together for 1–2 mins. Don’t overcook — veggies should stay crisp. * Warm your tortilla (1–2 pcs), add a generous layer of the veggie mix, top with air-fried paneer (~½ cup cubes), 2–3 tbsp guacamole, and finish with 1–2 tbsp chopped coriander.
