Wash and pat dry the eggplant 2. Slice lengthwise Prepare Batter 1. Mix besan, rice flour, turmeric, chili powder and salt 2. Add water gradually to make a smooth, medium-thick batter Frying 1. Heat Saloni Mustard Oil in a kadhai on medium heat 3. Dip eggplant slice fully in batter, shake off excess 4. Slide gently into oil 5. Fry 3–4 slices at a time 6.
