Ingredients: Oil – ¼ cup Onions – 2–3, sliced Mutton – 1 kg Noor Nihari Masala – as per taste Water – 12 cups For slurry: Wheat flour – ½ cup Water – as needed For garnishing: Rogan or oil Green chillies Ginger juliennes Method: Heat oil in a pan and sauté the sliced onions until golden brown. Add the mutton and Noor Nihari Masala, mixing well so the flavours coat the meat perfectly. Pour in the water, cover with a pressure cooker lid, and cook until the mutton becomes tender. Meanwhile, prepare a smooth slurry by mixing wheat flour with water. Once the meat is cooked, remove the rogan (oil layer) and slowly add the slurry while stirring continuously. Let it cook until the gravy thickens beautifully. Transfer to a serving bowl, garnish with rogan, green chillies, and ginger juliennes, and serve hot.
