Ingredients: - 1 cup mixed millets (foxtail millet, pearl millet, finger millet, etc.), cooked - 2 cups puffed rice (murmura) - 1 cup sev - 1 large onion, finely chopped - 1 large tomato, finely chopped - 1 large potato, boiled and diced - 1/4 cup roasted peanuts - 2-3 tablespoons green chutney - 2-3 tablespoons tamarind chutney - 1 teaspoon chaat masala - Salt to taste - 1/4 cup fresh coriander leaves (cilantro), chopped - Juice of 1 lemon - Optional: chopped green chilies, roasted cumin powder, grated coconut Instructions: 1. In a large mixing bowl, combine the cooked mixed millets, puffed rice, sev, chopped onions, tomatoes, boiled potatoes, and roasted peanuts. 2. Add green chutney and tamarind chutney according to your taste preference. Start with a couple of tablespoons of each and adjust as needed. 3. Sprinkle chaat masala and salt over the mixture. Toss everything together gently to ensure all the ingredients are well combined. 4. Squeeze fresh lemon juice over the bhel puri and give it a final toss. 5. Taste and adjust seasoning if necessary, adding more chutneys or spices as desired. 6. Garnish the bhel puri with chopped fresh coriander leaves (cilantro). 7. Serve the mixed millet bhel puri immediately, as it tends to get soggy if left for too long. 8. Optionally, you can also add chopped green chilies, roasted cumin powder, or grated coconut for extra flavor.
