
Here’s how I made it: Chicken: Already cooked, cut into small pieces, marinated in salt, pepper & butter. Salad Base: Barakat Power Mix (kale, spinach, lettuce) + chopped cucumber + chopped carrot + chopped white/salad onions + cooked sweet corn. Dressing: Blend together coriander, mint, 2 garlic cloves, small piece of ginger, 1 green chili, a small squeeze of lemon & 2 tsp yogurt. Assembly: Put salad base in a container, pour dressing on top, add a pinch of salt & drizzle olive oil, then shake it well. Optional: top with nuts or extra veggies. Perfect mix of spicy & sweet! 😋 P.S.
