
Comfort Food Ep3 " SINGHARE KI KACHRI" Singhare Kachri is a famous street side delicacy from the by-lanes of Uttar Pradesh and Uttarakhand. The water chestnut used for this recipe are dark purple one not the green ones. Boiled and then cooked over low flame till the water chestnut gives the green signal that they are ready to served. To make, wash the water chestnut properly. Pressure cooker water chestnut for four to five whistle over medium flame. Now it become easy to remove the outer peel of water chestnut. Collect the pale white pulp in a separate bowl. Now,again pressure cook it with some ghee, asafoetida,salt, chilli powder and cumin seeds over water chestnut upto 20 min over medium flame. Now Roughly mash it with masher. Heat the oil in a pan add mashed water chestnut and add some milk and some cream and roast it properly. Before serving, drizzle some lemon juice and dash of ghee on the top. Enjoy..!!
