
Everyone is obsessed with biryani. I get it. I really do. But if you ask me what actually feels like home, comfort, and a proper Sunday afternoon in Bengal it’s sada chicken pulao. This is slow-cooked, fragrant, mild, comforting, “ek plate e shob sheshe jai” kind of food. In Bengali homes, pulao isn’t trying to compete with biryani. It has its own place especially on Sundays, special lunches, or when you want something rich but gentle. No heavy spices, no overpowering masala. Just rice, chicken, aroma, patience. I feel we don’t talk enough about how pulao holds space. How it lets the chicken shine. How it doesn’t try too hard. How it still hits the spot every single time. Maybe biryani gets the hype. But pulao? Pulao is what stays. If you’re Bengali, you already know. If you’re not this might be your sign to try. White/sada Chicken pulao (Followed the recipe from Lost and Rare Recipes page) Ingredients: - Chicken - Beaten curd - Red chilli powder - Garlic paste & Ginger paste (1:1) - Salt (Marinate for 1 hrs atleast) for onions: - White oil - **Slice onions** - Salt chicken: - Oil (remaining) - Ghee - Marinated chicken - Marinate water (cook until 90% cooked) Rice: - Water - Bay leaf - Elichi - Salt - Kewra Jal - Rice (cook until it's 90% cooked and then remove the spices) Assemble: - Ghee - Rice - Chicken - Chicken gravy - Onion - **nutmeg powder (just grate it)** - Ghee - Kewra Jal (repeat this step two times, and then top it with RICE AND FRIED ONION let it steam for 20 minutes) . . . . . . . . .
