
Ilish Macha Kachaa Jhol (ଇଲିଶ ମାଛ କଚା ଝୋଳ) — a very light, curry where the fish is cooked almost directly in the mustard and curd based broth, keeping its natural flavour intact. Ingredients: Ilish (Hilsa) fish – 4–5 pieces (raw, not fried) Mustard oil – 3–4 tbsp Onion – 1 medium Green chillies – 4–5 (slit) Turmeric powder – ½ tsp Red chilli powder – ½ tsp (optional) Putana - ½ tsp Salt – to taste Curd (fresh, beaten) – ½ cup Water – 1 to 1.5 cups Fresh coriander – few leaves (optional) Method: 1. Prepare Fish – Wash the ilish pieces lightly (don’t over-wash, or aroma will reduce). Rub with a little salt and turmeric. 2. Heat Oil – In a kadhai, heat mustard oil till it smokes lightly, then cool a bit. 3. Tempering – Add ½ tsp Putana, onion and fry till golden brown. Add tomatoes and let is fry. Than add mustard paste and cook in slow flame. 4. Curd Mix – In a bowl, whisk curd with turmeric, chilli powder, and salt. Add 1 cup water and mix well (this prevents curd from curdling). 5. Add Gravy – Pour this curd-water mix into the hot oil. Cook on medium flame, stirring continuously till it comes to a boil. 6. Add Fish – Gently slide in the raw ilish pieces. Cover and cook on low flame for 6–8 minutes, till the fish is just done. Don’t stir too much, or ilish may break. 7. Finish – Add fresh coriander (optional) and extra green chillies for aroma.
