
These Ragi Ladoo with Dates - Dry fruits & Jaggery are full of energy, inner strength & nutrients. Detailed recipe for Ragi Ladoo - Ingredients - made 30 ladoos approx 1. Ragi Flour - 250 gms 2. Jaggery - 200 gms 3. Ghee - 1/2 cup - 3/4 cup (as per requirement) 4. Dates - 12-14 5. Almonds - 1/4 cup 6. Cashews - 1/4 cup 7. Walnuts - 1/4 cup 8. Pista - 1/4 cup 9. Raisins - 1/4 cup 10. Pumpkin seeds - 1/4 cup 11. Melon seeds - 2 tbsp 12. White sesame seeds - 2 tbsp 13. Grated coconut - 1 cup 14. Ealichi powder - 1/2 tsp 15. Water - 3 tbsp around for jaggery syrup Method - 1. Start by frying/ roasting all the dry fruits in ghee. 2. Almonds, cashews, walnuts & pista together, then add raisins & roast for a minute. Keep them in a bowl & let them cool. 3. Now fry all the seeds in ghee - melon & pumpkin seeds. Here I am not adding sesame seeds because I don’t want to grind them. So I have roasted them separately. 4. Now grind all the dry fruits & seeds (not sesame seeds) into corse powder on the pulse mode ** make sure the dry fruits are cooled down completely, otherwise they will start turning into butter) 5. Roast grated coconut till golden brown & keep aside. 6. Wash the dates & de-seed them, grind them roughly into paste. 7. Fry/roast this dates paste adding some ghee for a minute or two. 8. In the same pan add jaggery & water to prepare jaggery syrup. 9. Let the syrup boil for 2-3 minutes, then sieve them to remove all the dirt. Jaggery syrup is ready. 10. In another pan add remaining ghee & roast ragi flour for 8-10 mins on low flame. 11. Now it’s time to combine everything - dry fruits & seeds powder, grated coconut, ragi flour, dates paste, jaggery syrup, ealichi powder & roasted sesame seeds. 12.
